Roasted Pumpkin Salad Recipe

To keep up with pumpkin season, let’s make roasted pumpkin salad. This will be one of my simplest new recipes, of a very tasty comfort food.

Decided to combine some of my favorite flavors in one place and loved the result. You can always add an ingredient or spice to this dish, season or to your taste and trust me it’ll taste absolutely delicious. Remember that best food is made with a little imagination and lots of love! At least , that’s how I cook and come up with my quick recipes.

Roasted Pumpkin Salad - Perfect Salad Ideas

Ingredients 

Roasted Pumpkin Salad - Perfect Salad Ideas

1 ½ -2 lbs pumpkin, cleaned, cut into 1” -2” cubes

To spice the pumpkin use: salt, pepper, powdered garlic, turmeric, cayenne, everything to taste ½ or ¼ tsp of each

1-2 tbs olive oil

You will need a baking pan, lined with foil or lightly greased with cooking spray

You will also need:

1 large onion, thinly sliced into semicircles

1-2 tbs olive oil

1 red or green bell pepper , sliced into circles or strips

1-2 garlic cloves,minced

Half lemon, zest and juice

1 can garbanzo beans, rinsed, strained

1 pack ( 8oz/227g) white mushrooms, coarsely chopped, small ones can be used without slicing

Salt and pepper to taste

Fresh herbs : parsley, basil, cilantro or dill, anything on hand

Romaine lettuce,chipped,  I used entire bunch

Directions 

Preheat the kids vran to 425°F /200°C degrees

Start by prepping the pumpkin, clean, cut into cubes, spice and season, drizzle with oil and toss to combine and to spread the spices evenly

Roast 20-25 minutes or until tender

Meanwhile go ahead and cook the rest

In a large skillet combine olive oil and onions

Sauté 2-3 minutes and add the peppers, cook another 2-3 minutes

Add mushrooms, garbanzo beans, salt,pepper

Cook a few minutes, stir constantly

Add roasted pumpkins when ready, zest and juice the lemon, mix to combine

Pour it over chopped lettuce,top with chopped herbs , toss and serve
