Rolled Eggplants Recipe

Rolled Eggplants.For the entire month of December I’m planning to share dishes and desserts mostly from Armenian cuisine and the ones we usually make for our New Year festivities. I doubt I’ll manage to film and share all of them, as the list is quite long, but I’ll try post my most favorites for sure.

This Rolled Eggplants appetizer is certainly the one you would want to try. Incredibly delicious and very simple to make.

Ingredients

Rolled Eggplants Recipe - Armenian Cuisine

4-5 medium eggplants, washed peeled and sliced

½ cup strained yogurt ( lebni),½ cup sour cream

⅔ cup finely chopped or smashed raw walnuts

1-2 garlic cloves,minced

Pinch of salt + extra for seasoning fried eggplants

½ tsp curry powder

Pomegranate seeds and fresh dill for garnishing

Oil for frying ( about 1-2 cups)

Directions

Rolled Eggplants Recipe - Armenian Cuisine

Start preheating the oil in a frypan or in a skillet

Wash, peel and slice the eggplants to the length ,about ½ cm thickness

Fry and place on a paper towel , lightly salt to taste

In a medium bowl combine : sour cream, yogurt, walnuts, garlic, curry and salt

Mix to combine

At this point you can start prepping the fried eggplant rolls

Place a teaspoon or a bit more onto the eggplant,spread a layer and roll

Nicely arrange the rolls on your serving platter

Garnish with pomegranate seeds, fresh dill ,chopped walnuts

Enjoy!

Պատրաստման եղանակը 


Սմբուկի կեղևը մաքրել, աղել, թողնել մի կողմ։

Այդ ընթացքում պատրաստել միջուկը։

Քամած մածունն ու թթվասերը խառնել,

ավելացնել մանր կտրատած ընկույզ, սխտոր, քրի (սունելի), աղ

Սմբուկը քամել,տապակել բուսական յուղով

Միջուկը քսել, փաթաթել

Պատրաստ է

  1. Thank you for posting the recipe, I make this without sour cream, with lebni, and will try adding sour cream next time. One comment that I would like to make is you should really consider tying your hair when cooking, and also avoid touching it so much. Just something that I noticed, not trying to be mean ?

    • Marine jan,I don’t think I touch my hair too much ,normally I keep it tied in a bun.
      I’m not a restaurant chef,cooking for customers,
      It’s my home kitchen and if I even touch my clean hair once or twice ,nothing terrible or unsanitary will happen. I won’t say your comment is mean but it’s Unnecessary
