Sauteed Veggies Appetizer Recipe
Simple appetizer called Perets, made with sauteed veggies, such as carrots and peppers. The name means pepper in Russian . Can’t tell , why the appetizer got the name, but some say it’s after an imported canned food that was quite similar to this , except it was made with bell peppers stuffed with sauteed carrots . Have to admit Perets is one of my most favorite sides to rice , noodles or fried /mashed potatoes. I remember my mom making these sauteed veggies in a large pot, she’d can Perets for wintertime, when fresh veggies were out of season and comfort food was the most preferred during cold winter.

2 lbs carrots, cleaned and washed , cut into strips
2 ½ -3 lbs bell peppers , I also use chili peppers ,
Cut into strips
2 medium onions, finely chopped
½ cup olive or canola oil, I mixed both
2-3 garlic cloves, minced
Fresh herbs : parsley, cilantro about half a bunch of each
2 tbs red pepper paste
4 oz tomato sauce
Salt, black pepper to taste
I also add a bit of curry powder
4-5 bay leaves
Sauté onions until translucent
Add the carrots, stir and cook 5-7 minutes
Stir in peppers , cook another 7-9 minutes or until the veggies are slightly tender, don’t overcook !
Mix together pepper paste and tomato sauce and pour over the carrot -pepper mixture
At this point you can add the rest of your ingredients: garlic, bay leaves, herbs, salt and pepper
Reduce the heat to low and cook another 7-10 minutes
You can pour Perets into sterilized jars, boil in water 20-25 minutes and can to save for month
Or simply pour in glass or plastic containers, let cool down and save in fridge for month
