Spinach Fritters Recipe

Uniquely delicious spinach fritters from Armenian cuisine, called: ohtcheh. And what’s more interesting, that these spinach fritters are served with spinach dip, a simple and fulfilling side to complete this appetizer.







Very few ingredients are needed to make ohtcheh, and you can simply make it by eyeballing, just as I did. As long as you have the ingredients list and find time to watch YouTube tutorial, you should be good to go .

Ingredients 

Spinach Fritters Recipe - Ohtcheh - Armenian Cuisine

For spinach fritters

24oz baby spinach, soaked in boiling water for 5-7 min, if using regular spinach, boil for 2-3 min

Half a bunch of various herbs, such as: parsley, scallions, cilantro, dill , chopped finely

1-2 garlic cloves, minced

2 large eggs, beaten

⅔ cup or more flour, flour amount depends on how well you squeeze the spinach and how much liquid the herbs absorbed while soaking, be sure to strain and squeeze very well




½ tsp baking powder

Salt, black and red peppers to taste

Oil for frying

For spinach dip 

Save a handful of cooked spinach you soaked for fritters

1-2 tbs strained yogurt

½ cup regular plain yogurt

1 large garlic clove, minced

Salt to taste

Directions

To make spinach fritters 

Cook and squeeze spinach very well

Chop coarsely or finely

Add the rest of ingredients and mix to incorporate

Preheat a nonstick skillet filled with oil, I used sunflower oil

Form small balls with an ice cream scoop , flatten and fry until golden on both sides

To make the spinach dip 

Finely chop the cooked spinach

Add garlic, yogurt and salt

Mix together and done !

Serve fritters hot or warm
