Tarragon Fish Recipe
This fish and tarragon dish , from Armenian cuisine, may be the fastest and the most delicious ways of cooking a trout . Adding potatoes makes this a complete dinner dish . It takes minimum ingredients and time to make and happens to be my absolute favorite.

You can choose one large or a few small trouts
Young potatoes , 1-2 lbs, skin on, washed
Note* if choosing large russet potatoes, peel and slice
One bunch of fresh tarragon
Cold water, just enough to cover the fish and potatoes
Salt and black pepper to taste
Clean and wash the fish thoroughly, salt-pepper to taste and set in a fridge to marinate 1-2 hours
Place a good amount of tarragon in the cavity and arrange it in a pot
Add potatoes, more salt and black pepper
Pour the cold water over , enough to cover everything and a bit more
Cook covered half way , over medium to low heat
Check the readiness of potatoes, turn off the heat as soon as it’s cooked
Discard the water , let it cool down and serve
