Tatar Boraki Recipe

Simple, easy and filling dish from Armenian cuisine called tatar boraki , which is basically fresh pasta. We serve it with sautéed onions and garlic yogurt, as simple as that. But this simple dish has that magic taste that you can never get enough.I remember my grandmother would make this tatar boraki every time she had to feed many people. And she’d always have many helpers while making tatar boraki, someone would rollout the dough, cut and pass to the other for cooking and then another one would take it to the table and serve. The real Armenian family style cooking .

Ingredients 

For the dough

2 Eggs, 1 whole and the yolk, beaten at room temperature

1 Cup warm water,1 Tsp salt,1 tbs sugar

2-3 Cups all purpose flour, or as much as you need to make non sticky not too soft dough

You will also need: 

2 onions, finely chopped

60-70 grams butter

3-4 tbs olive oil

2-3 Garlic cloves, minced

1 Cup plain Greek yogurt

2-3 bay leaves

A large pot of boiling water , salted to taste

Directions

Start by making the dough

Combine eggs, water, salt, sugar mix together

Start adding the flour

Knead into a non sticky dough , cover and set aside

Chop the onion and saute with butter and oil until golden color, set aside

Mince the garlic and mix with yogurt

At this point you can start boiling the water with salt and bay leaves added

Divide the dough into 3 equal portions for easy rolling

Roll out the dough into approx. 14”-16″ thin circle use extra flour for easy rolling

Using a sharp knife or pizza cutter slice into rectangular or diamond shapes

Add the sliced pasta to boiling water and cook 4-6 minutes or until they float

Make sure to taste the salt !

Layer a small amount of cooked pasta in a shallow bowl

Drizzle with sautéed onions then garlic yogurt

Layer another batch of pasta and repeat ( drizzle with onions and yogurt)

Serve hot
