Couldn’t wait to share this really easy and delicious truffle cake recipe. So had to make a quick pass on my “Holiday dishes from Armenian cuisine” month and post the truffle cake recipe .

The best part with this any sponge cake is that it can be baked a few days or weeks ahead, frozen and used as needed. So this easy dessert can be a real time saver for this busy Holiday season.

Ingredients 

Truffle Cake Recipe

For the sponge cake

6 Large Eggs (at room temperature)

1 Cup granulated white sugar

1 tsp vanilla extract

½ Cup cornstarch

¾ Cup all purpose flour

1 tsp Baking powder

¼ Tsp salt

For the sugar syrup

1 ½ cups of water ( I use hot so it boils faster)

½ cup of granulated white sugar

2 tbs rum or any sweet liquor

For the whip cream frosting

1 ½ cups of cold heavy whipping cream ( I use full fat)

½ cup of semisweet chocolate chips

1 tsp vanilla extract

1 ½ tbs confectioners sugar

You will also need 2 tbs cocoa powder to mix with cake crumbs, to dust the cake at the end

Truffle chocolates to use as cake decor ( optional)

Directions

Making the cake:

Preheat the oven to 350°F/177°C degrees

Line an 8” or 9” baking pan with parchment paper ,grease the sides of the pan with butter

Combine the dry ingredients by sifting together ;flour, cornstarch, baking powder and salt, set aside

In a mixing bowl beat the eggs, sugar and vanilla extract on high speed until it thickens,becomes fluffy and pale color

Turn off the mixer and start adding the dry ingredients : sift and fold in with spatula, don’t use a mixer for this step

Do not over mix not to deflate the eggs mixture

Bake 35-40 minutes or until the top is golden brown color

Let it cool down completely

Gently and very thinly  trim the cake skin from all the sides, top and bottom included

Save those peeled sides to dry out while you work on other steps ( you can place those back into warm oven for faster drying)

Slice the cake through the center and divide in two even layers, set aside

Making the syrup

In a heavy bottom saucepan mix water and sugar

Bring to a boil on high heat

Lower the heat and allow to simmer for 7-10 minutes

Let it cool down and add the rum ( or liquor )

Making the whip cream frosting

Melt the chocolate , use microwave or double boiler, set aside while you whip the cream

Whisk the heavy cream, vanilla extract and powdered sugar on medium speed for 3-5 minutes

Increase the speed and whisk until stiff peak formed

Lower the speed and beat in melted  chocolate

Remember to stop and scrape 1-2 times

Making the truffle dust

Using hands or processor crush the peeled cake parts into fine crumbs

Strain once and add the cocoa powder

Strain both together , set aside

Assembling the cake

Place one of the layers on a 8” 9” cake plate ( depends what size of cake you baked)

Generously sprinkle with half of the syrup

Add about the half of the frosting and spread out evenly

Place the other layer on top and do the same process

Evenly frost the cake entirely

Drizzle the top and the sides with truffle dust

Decorate with truffle chocolates

Allow to chill an hour before serving

  1. Oh my god. This cake was so delicious. I made it today for our gathering. Everyone was just telling me that was the best cake. By the way cream tasted like Eskimo.
