Upside Down Peach Cake Recipe

Simple upside down cake with one of my favorite fruits : peaches.

Some may recall this cake I made about two years ago, but with apricots. To tell the truth , as much as I love apricots, this kind is way better and always turns out perfect . The reason , is the apricots express too much juice when they bake and cake turns out way too moist.

I’d recommend to choose hard, not too ripe fruit , to insure the cake comes out very good.

Ingredients

70 grams unsalted butter , plus a little extra for greasing the pan

1 and 2/3 cups of sugar , divided*

1/3 cup water

1-2 peaches, sliced

2 Large eggs, at room temperature (I mixed up during YouTube tutorial and put only one)

1/3 cup sour cream, at room temperature




Zest of one small lemon

1/2 teaspoon pure vanilla extract

1 cup plus 2 tablespoons all purpose flour

1/2 teaspoon baking powder

1/4 teaspoon kosher salt

Confectioners sugar for dusting (optional, I wouldn’t recommend)

Directions

Preheat the oven to 350°F

Generously butter a 9-inch pie dish and arrange sliced peaches to cover the bottom of the pan entirely

Set aside

Start by making the caramel 

Combine 1 cup of the sugar and 1/3 cup water in a small saucepan and cook over high heat until it turns warm amber color, about 360°F on a candy thermometer

Swirl the pan but don’t stir

Pour ready caramel evenly over the peach slices

In a mixing bowl beat the butter and the remaining 2/3 cup of sugar until light and fluf

Lower the speed and beat in the eggs 1 at a time

Add the sour cream, zest, and vanilla and mix until combined

Sift together the flour, baking powder, and salt, add to the butter- eggs mixture in 2 batches

Mix until combined



Pour the cake batter evenly over the apricot slices

Bake 40-45 minutes, or until a cake tester comes out clean

Cool for 15 minutes, then put the cake on a flat cake plate and turn upside down

⅔ բ շաքարավազ

1 խոշոր ձու

⅓ բ թթվասեր

1 կիտրոնի քերած կեղևը

0.5 թ գ փխրեցուցիչ (սա սոդան չէ, սոդա չկա բաղադրիչների մեջ)

Վանիլին

Պտղունց աղ

1 բ +2 ճ գ ալյուր

 

Թխել 45 րոպե, նախապես տաքացվրած ջեռոցում 180° С  

 

Թխելուց հետո թավան դնել ցանցի վրա որ սառի 15-20 րոպե, հետո շրջել համապատասխան ամանի վրա
