Veggie Burger Recipe
Having a vegetarian at home, completely changes the way you cook, or think of managing your meals. plus being a big fruit and veggie lover myself helps to keep my regular cooking menu quite healthy, and I can’t quit my breads and pastries so no comments on that 🙂
I’ve got quite a few recipes for veggie burger and other meals suitable for vegetarians. I wiill start with this one and go from there.
This one is my personal favorite from all the other vegetarian burgers I make or even tasted in restaurants, in fact I never even like the restaurant version, you can barely defer what’s in that mixture .
Back to our veggie burger : simple,quick and easy to make,that’s how I’d describe it in the first place and second: let’s get to the recipe and enjoy some easy,fun cooking!

2 large or 3 medium zucchini ,shredded
2 garlic cloves, minced,2 eggs, beaten
⅓ cup fresh chopped greens:scallions, cilantro,parsley,dill (or anything on hand ,but keep scallions or onions as MUST)
Salt & pepper to taste
1 cup of whole wheat flour (add extra if the mixture is too runny )
Preheat a nonstick skillet or griddle to 375°F
In a bowl combine all the ingredients and mix to incorporate, until thick non runny mixture is formed
Spoon it on the skillet according to your bun size (you can brush the skillet with some olive oil)
Cook until both sides are brown and it’s fully cooked 7-10 minutes
Enjoy with your favorite veggies,salad and condiments
*You can freeze these vegetarian burgers for up to 4 weeks ,wrapped in plastic and then in a foil
