Wafer Rolls with Caramel Buttercream


Delicious sweet treats from our childhood : wafer rolls filled with caramel buttercream. Of course these same wafer rolls can be filled with any of your favorite buttercream or simple caramel condensed milk. To me regular caramel filling seems too sweet, that’s why I decided to fill these with caramel buttercream instead.
For some reason these wafer rolls always remind me of winter, circus, New Years…
As a child , I remember having these wafer rolls almost every single time my parents take us to circus, and it always happened to be in Holiday season.
My childhood memories came over and made me introduce this recipe to all of you, around spring:)

Ingredients

Wafer Rolls with Caramel Buttercream - Вафельные трубочки
For wafer rolls
You will need a flat iron wafer maker ( the same you’d use to make ice cream cones)
4 large ( or xlarge) eggs, at room temperature
½ cup sugar
½ cup heavy cream (or milk)
1 tsp vanilla extract
½ tsp baking powder
¾ cup flour
¼ tsp salt

For caramel buttercream
150 grams unsalted soft butter
1 can caramel condensed milk (dulce de leche), or simply cook regular condensed milk for 3 hours to turn it into thick caramel, make sure it’s completely cooled when adding to butter
1 tsp vanilla extract
Additionally you’ll need 1 tbs confectioners sugar and 2 oz melted chocolate

Directions

To make the wafer rolls
In a bowl combine combine dry ingredients:flour, salt, baking powder and set aside
Beat the eggs and sugar until pale and fluffy




Add the cream,vanilla extract and dry ingredients
Mix for 1-2 minutes, wafer batter is ready
Preheat the wafer maker
Add about a tablespoon of batter and cook until bright golden color, may take 1-3 minutes, depending on your wafer maker
Immediately remove the ready, still soft wafer and roll , refer to YouTube tutorial for more details
To make the caramel buttercream
Beat the butter on high speed until pale and fluffy
Add vanilla extract, switch the mixer speed to low and start adding the caramel a tablespoon at a time

Using a piping bag fill the wafer rolls from both ends
Additionally you can drizzle wafer rolls with melted chocolate and lightly dust with confectioners sugar
