Simple , healthy and delicious anoush apoor or sweet pudding from Armenian cuisine. As January 6th, the Armenian Christmas is approaching,

I thought it’d be useful and appropriate to share a dish we’d serve on that special day.Hope many will give it a try and love it.

Ingredients

Recipe will serve 3-4 people

1 ½ -2 cups of pearled wheat , wet in cold water overnight

3-4 cups of boiling hot water, you may need more

1 ½ cups dried fruits: apricots , raisins, plums, figs or anything on hand , I prefer using non sorbet fruits

1 ½ cups of chopped walnuts




½ cup pistachios, skinned , crushed

1 tsp salt

Honey , agave nectar or sugar to taste

Cinnamon or Allspice to taste

Directions

In a large saucepan combine water, salt and drained wheat

Cook over medium to high heat , stir occasionally to avoid sticking

May take up to an hour to cook, check the readiness by consistency , it should look smooth, thick and not too runny (like oatmeal pudding)

Add more water if needed to reach the right consistency

Allow the pudding to set and cool down




Mix in chopped nuts and dried fruits

Sweetener , cinnamon / allspice to taste

Stir and enjoy
