Strawberry Chocolate Cake Recipe

Another one of my updated recipes .I turned my mother in law’s apple sour cream chocolate cake recipe into really delicious strawberry chocolate cake recipe.

I make this exact same chocolate cake recipe with gluten free flour ,turns out super delicious ,moist ,”melt in your mouth” textured.This is a really delicate dessert and very easy to make .You can substitute strawberries with raspberries or omit berries if desired .Best if chilled for a couple of hours before serving .

Chocolate Cake Recipe - Տորթ Սկեսուր

Ingredients 

For Cake Butter

200 Grams unsalted soft butter

¾ Cup granulated white sugar

2 Eggs ,at room temperature

1 Tsp vanilla extract

1½ Tsp vinegar

1 Tsp baking powder

½ Tsp baking soda

¼ Tsp salt

1½ Cups gluten free flour /or 2 Cups regular all purpose flour

For Whipcream Frosting

2 Cups heavy whipping cream ,cold

⅓ Cup white granulated sugar

1 Tsp vanilla extract

300 Grams fresh, sliced strawberries

7 Grams(1 pack) unflavored gelatin +¼ Cup cold water,mix set aside.use a heatproof bowl,you will need to reheat it before adding to the cream,more directions will follow below

For Chocolate Ganache





½ Cup heavy cream

¾ Cup chocolate chip (semisweet or bittersweet)

20 Grams unsalted butter

1Tbs rum (optional)

Directions

Preheat oven to 350°F /180C degree

In a large bowl sift together dry ingredients for cake butter:flour,salt,baking soda,powder,set aside

In a mixing bowl,on high speed beat butter and sugar until fluffy, pale consistency

Lower the speed, beat in the eggs, one at a time

Remember to scrape the bowl in between additions

Add vanilla extract and vinegar

Start adding dry ingredients,  in 2-3 additions

Line a 9”x 13”or 9” diameter  baking pan with a parchment paper

Divide the cake butter into two equal portions,

Spread with spatula on the parchment paper as even as possible

Bake 20-25 minutes or until golden color

Remember to switch the pans halfway through the baking

Let cool down the layers while you make the frosting

Tip:

This cake dough is quite sticky,after it bakes

Also grease the baking pan and paper for easy peel, and let it cool for 5 minutes before peeling the parchment paper off

Handle baked cake layers carefully, they are quite fragile

To make the frosting

Mix cold water and gelatin, set aside




In a mixing bowl whisk cold heavy whipping cream, sugar and vanilla extract

Tip:

For best results freeze the mixing bowl and whisk attachment 10-15 minutes

Whisk on low speed 1-2 minutes ,then on high speed,2-3 minutes

Whipcream should have thick and stiff consistency (as if you make a meringue) ,do not overmix

At this point add melted gelatin and mix another minute,to combine

Tip:

Make sure to microwave melted gelatin for a 1-3 seconds ,to turn it into warm liquid ,NOT hot

Add sliced strawberries and using a spatula gently fold in cream

Frost the cake by spreading the cream evenly

Prepare the chocolate ganache by melting all ingredients together

Pour warm chocolate ganache over the cake and spread with spatula

Chill the cake in the fridge for 1-2 hours before serving

¾ բ շաքարավազ , 1 բաժակից մի մատ պակաս

1 ճ գ քացախ

0.5 թ գ սոդա

1 թ գ փխրեցուցիչ

վանիլ

2 բ ալյուր (կամ 1.5 բ առաց գլուտեն ալյուր)

Կրեմը 

2 բ սերուցք (բարձր յուղայնության)

0.5 բ շաքարի փոշի

վանիլ

7 գ դոնդող (ժելատին) , պարտադիր չէ

Գլազուրը 

125 գ շոկոլադ

⅓  բ սերուցք կամ կաթ

10 գ կարագ

1 ճ գ ռոմ կամ կոնյակ (պարտադիր չէ)

1 թ գ մեղր

      This cake may be hard to make as vegan, too many unreplaceable ingredients, I may try to create a similar recipe , but will take time for my tests, will post it as I figure out:)
