Armenian Fish Tolma

Light and delicious pomegranate, fish Tolma from modern Armenian cuisine. It’s made with a few simple ingredients and can be served hot or cold , with a squeeze of fresh lemon juice or your favorite fish sauce.

Armenian Fish Tolma Recipe

Ingredients 

Armenian Fish Tolma Recipe

2 lbs fish fillet, I used salmon , finely chopped or ground

¼ cup pomegranate seeds

1 tsp dried or 2 tsp fresh dill

1 tsp dried or 2 tsp freshly chopped tarragon

Salt, black and red pepper to taste

⅓ tsp garlic powder or 1 small clove minced

1 ½ tbs pomegranate molasses




1 jar of marinated grape vines , you may not use the entire jar

Boiling water for cooking the Tolma

2 tbs olive oil

Lemon and a few garlic cloves (optional)

Directions

Start by cooking grape vines

Simply place them in a pot with boiling hot water and allow to boil for 7-10 minutes or until they are slightly tender

Rinse cooked vines with cold water

Making the stuffing for fish tolma





In a bowl combine: fish, seasonings , spices and herbs, mix to incorporate

Add pomegranate seeds and mix with spoon

Follow YouTube instructions for stuffing the vines

Arrange fish stuffed tolmas in a pot, layer with extra leaves, garlic cloves, lemon slices

Drizzle with olive oil, add a little salt and place a plate on top to keep it secure

Pour hot water enough to barely cover the plate

Cook 7-10 minutes or until the fish is fully cooked
