Kharpert Kololak Recipe
A true gourmet dish from Armenian Cuisine we call Kharpert Kololak . This dish can be a good addition to comfort food menu . And will go really good with any kind of pilaf , veggie salad or pasta.
Very simple list of ingredients and quick preparation makes Karpert Kololak a good time saver meal , not to mention it’s very delicious and quite filling. I tried making mini sliders with added greens and it turned out amazingly tasty.

1 lbs ground meat, is suggest to mix beef and turkey
1 cup bulgur , #1 grind
1 small onion
1 garlic clove
2-3 tbs parsley , cilantro or dill
Salt, red and pepper, ground cumin, coriander to taste
For tomato sauce
¼ cup red pepper paste
2 tbs tomato paste or ¼ cup tomato sauce
3 tbs vegetable oil
2-3 bay leaves
Salt and black pepper
1 ½ cups water
Mix together meat and bulgur, set aside
In food processor combine : egg, onion, garlic, herbs and spices, process until smooth
Pour it over meat , bulgur mixture and mix to incorporate
Form small flat balls and set aside
Preparing tomato sauce
In a large saucepan combine : oil, tomato and pepper pastes
Cook 2-3 minutes and add water and spices, bay leaves
Continue cooking 2-3 minutes
Add meatballs to boiling sauce and cook covered 7-10 minutes
Lightly mix to avoid sticking to the bottom of the pan
Serve with freshly squeezed lemon juice
