Lubajash – Beans and Rice Pilaf
Festive yet simple , not to mention an extremely delicious meal lubajash, a dish from Armenian cuisine, from the region Artsakh .
The dish is usually made during holiday season . The name of the dish comes from the word lobi (bean) and jash (meal ).
Only a few ingredients needed to make this comfort food that’s very tasty and quite filling.

Recipe is good for 3-4 people
1 ½ cups rice , I used parboiled long grain rice
3-4 cups of hot water for cooking the rice , salt to taste
1 can or 16 oz red beans
1 large egg
½ cup plain yogurt
50-70 grams of butter , sliced into small pieces
Cook the rice with salted hot water, strain
Mix the beans with cooked rice set aside
Whisk the egg and yogurt
In a pot melt some of the butter
Pour yogurt and egg mixture over the butter
Add in rice and beans
Put the rest of butter slices on top of rice and beans
Cover the lid and cook over medium to low heat about 25-30 minutes
Allow to set 10-15 minutes and serve
