Yet another original , tasty and healthy dish from Armenian cuisine, we call it pilaf qashovi with garbanzo beans.

All the simple ingredients combined in this pilaf , make it an incredibly delicious comfort meal that can be prepared within a few minutes .

Ingredients 

Pilaf Qashovi with Garbanzo Beans - Armenian Cuisine

A can of garbanzo beans 15 oz / 430 g

1 cup bulgur (#3 grind)

2 halves of chicken breast , or use any part of poultry you prefer , about 1 lbs

10-13 asparagus strands ,

Save a 2-3 to be added at the end

1 tbs tomato paste or 2 tbs sauce




1 ½ tbs red pepper paste , optional

2-3 tbs vegetable oil

Spices and seasonings such as : black and red peppers, cumin, coriander, curry , salt

Fresh herbs : parsley, cilantro, dill , anything on hand , about 1 tbs of each

Plain yogurt for serving

Directions

Start by cooking the chicken, cook until fully cooked, add salt, save the broth

In a small jar combine: tomato and pepper pastes, spices and about ⅓ cup of broth , mix and set aside

Eyeball the rest of ingredients into two and start arranging in a pot at this order : meat , garbanzo beans, bulgur , asparagus, drizzle with tomato- pepper mixture

Taste the broth to see if you need more salt

After arranging all your ingredients, pour some of the broth to slightly cover everything

Bring to a boil , then cover the lid and cook over medium to low heat 5-7 minutes or until the liquid is simmered




Open the lid , add herbs and a few pieces of sliced asparagus.

Cover the lid and allow the dish to set 10-15 minutes

Fluff and enjoy with plain yogurt or as is
