Pumpkin Soup – Ddmapour

Simple and delicious pumpkin soup from Armenian cuisine, called Ddmapour .

Only a few ingredients needed to make this healthy , light and very tasty soup. While pumpkin season, it’s the right time to take advantage and use this extremely nutritious vegetable. Pumpkin Soup - Ddmapour - Armenian Cuisine

Ingredients 

Pumpkin Soup - Ddmapour - Armenian Cuisine

1 lbs (460g) pumpkin, cut, peeled and cubed

2-3 tbs vegetable oil

1 medium onion, finely sliced

⅔ cup green lentils plus water for cooking, as much water as you need to fully cover lentils




5-6 cups of water for soup

Fresh herbs: parsley , cilantro, dill , or anything on hand

Salt and pepper to taste

Directions 

Combine pumpkin and water in a saucepan and start cooking

In another small pot start cooking lentils, cook until cooked

While those are cooking, sauté onions with vegetable oil, until golden color

As the pumpkin cooks, strain the water from cooked lentils and add to cooked pumpkin

Add sautéed onions, salt, pepper and herbs

Allow the soup to set 10-15 minutes and enjoy
