Spinach Puffs Recipe
Delicious spinach mushrooms stuffed puffs or puff pastry . Received an Armenian cookbook by Mariam Pashayan:
“Cooking with my Armenian family”, and couldn’t wait to try one of her recipes.
The only addition to the recipe were mushrooms and I loved how the tastes combined . You can definitely leave out .
Really simple , filling and tasty appetizer to be added to your holiday menu.

1 pack puff pastry dough (2 rolls or squares)
1 egg yolk for egg wash
12-16 oz fresh spinach, you’ll more spinach if mushrooms are left out from recipe
2 packs (450 g) mushrooms, sliced
1 small onion, finely chopped
2 tbs olive oil
1 tbs lemon juice
Spice and season to taste with salt, pepper, cayenne, coriander , garlic powder
Preheat the skillet with oil, add onions and mushrooms to sauté until gold color
Add spinach, cover the lid, lower the heat and allow to cook 2-3 minutes
Spice, season to taste
Allow the stuffing to cool down
Preheat the oven to 375°

Egg wash stuffed pastry and bake 28-35 minutes or until golden color
