Stuffed Cabbage Head Recipe
New to me, but apparently an old recipe from Armenian cuisine : spiced ground meat stuffed cabbage head . This is more of a luxury Tolma , since all ingredients are the same except for carrots.
This stuffed cabbage head may be an interesting addition for any festive occasion and why for your thanksgiving gathering.
You can prep it , set in the fridge and cook on the day you need it.

1 small cabbage head , about 1 ½ lbs
1 lbs ground meat, I mixed turkey and beef, use anything you prefer
¼ cup rice, preferably calrose (round grain)
1 medium size onion, finely chopped
2-3 tbs olive oil
6-8 oz carrots, chopped
8 oz mushrooms, not in the recipe, but I’m sure it’ll make a good addition to this recipe
1 red bell pepper, cut into small cubes, not in the recipe, but again, a good addition for taste and color
1 garlic clove , minced
Freshly chopped mixed herbs: parsley, dill, cilantro or basil , anything on hand , about ¼ cup
Salt , pepper, coriander, paprika , cumin, cayenne to taste
Dried herbs will work as well, especially savory ½ tsp
You will also need a large cheesecloth and a 6”-8” wide shallow bowl
Place the cabbage head in the freezer for a day, take out and allow to defrost and get tender
Separate leaves and set aside. A small detail that I’d like to mention: it’ll be better to save 3-4 largest leaves on a side, as is , but go ahead and remove the tough stems from the rest of leaves, simply slide the knife and cut through without damaging the leaves , that way you’ll have more tender textured dish
Rinse the rice a few times until the water is clear, add water , bring to a boil and turn off the heat
Cover with lid and set aside while you prep the rest
Sauté onions, carrots,mushrooms and pepper until slightly browned
Add fresh herbs and garlic
In a large bowl combine meat, rice and sautéed veggies
Spice, season to taste and start stuffing the leaves

Bake at 350°F preheated oven, about 1 hour and 40 minutes wrapped in foil or parchment , then remove the wrapping and bake another 30 minutes, overall the dish cooks within 2 hours and 10-15 minute
