Tapaka Aralez – Fried Chicken Recipe
Certain fried food can be made and served as a gourmet dish just like this Tapaka Aralez from Armenian cuisine. Original dish is made with lamb tenders, that they’d tenderize, marinate with salt for a few hours, then tumble in heavily spiced bread crumbs and fry.
I can’t even describe how uniquely appetizing this Tapaka Aralez is. You have to give it a try to taste it yourself.

1 ½ -2 lbs lamb or chicken tenders, I used breast meat
Salt to taste
1-2 tbs lemon juice
½ tsp garlic powder or 1 clove, minced fresh garlic
1 large egg, beaten ,1 cup bread crumbs , I use unflavored kind
1 tsp ground black pepper,1 tsp cayenne ,1 tsp ground white pepper
1 tsp Aleppo pepper or crushed red chili
4-6 tbs vegetable oil, I use avocado oil
1 tbs cornstarch
1-1 ½ cup water or white wine
Tenderize the meat with a kitchen hammer or rolling pin, refer to YouTube tutorial for more details
Add salt, garlic and lemon juice, massage the spices into meat and allow to marinate 30-50 minutes
Beat the egg, set aside
In a shallow bowl combine: bread crumbs and peppers, mix to incorporate
Preheat the skillet with oil
Immerse the meat into egg mixture, then tumble in pepper crumbs and fry on both sides until golden color
Use the same skillet and oil , I strained the oil to remove burnt particles
Add cornstarch, stir and cook 1-2 minutes
Add wine a little at a time , until a slightly thick sauce consistency is formed
Cook the sauce 2-3 minutes
Place fried meats in skillet and cook 1-2 minutes on each side , keep an eye to avoid sticking
Enjoy with a side of mashed potatoes, rice or green salad
