I’m not a big fan of candy or sweets in general, but when it comes to this one, I can eat non stop and finish the entire batch all by myself. And by “this” I mean :Amaretto almond caramel bites. Chewy ,creamy ,crunchy and so delicious.Preparation is not difficult or complicated, a few steps with correct timing and temperature , that’s what matters when making any candy .So be sure to prepare all the ingredients, tools and keep those stand by.
These almond caramel bites can be stored at room temperature up to 3-4 days, in fridge up to 2 weeks, or freeze in an airtight container, lined with wax paper in between the candies, up to a month.

Almond Caramel

Ingredients

Almond Caramel
1 cup firmly packed brown sugar
1/3 cap amaretto liqueur ( can be replaced with 2 tsp almond extract)
3/4 cup heavy whipping cream
1/4 cups light corn syrup
Pinch of salt
1/2 tsp vanilla extract
1/2 cup toasted chopped almonds ( I toast at 350° about 8-10 min)
20 grams of unsalted butter ( can be at room temperature or cold)
You will also need:
* 8″x 4″ loaf pan lined with a foil, buttered or sprayed with cooking oil to avoid sticking
*Candy thermometer
*Heavy bottom sauce pan to avoid quick burning or sticking
*Wooden spoon

Directions

Almond Caramel
Mix together : sugar,heavy cream,corn syrup, amaretto and salt
Bring to a boil by stirring with wooden spoon
As it boils cover with a tight lid and allow to cook about a minute ,to wash of the sugar crystals from the sides
Remove the lid and attach the thermometer
Cook on medium heat until the temperature reaches to 248°F/120°C
Remove from the heat
Immediately add : butter, vanilla and almonds
Mix and pour in prepared pan
Let it sit and cool down approx. 45-60 minutes
Remove the foil and slice into bite or bar size
Enjoy!
