Green Bean Salad Recipe

Absolutely delicious and simple green bean salad from Armenian cuisine.

Its served cold as a side to any kind of rice or noodles or even on its own with some good bread. I’d suggest to get flat green beans, but if you can’t get hold of it, use any kind.

This green bean salad tastes even better the next day, as it absorbs all the flavors properly.

Green Bean Salad Recipe - Armenian Cuisine

Ingredients 

1 ½ -2 lbs fresh green beans, cooked cut into strips

Finely chopped fresh herbs : parsley, cilantro, dill, about 1 tbs each

⅓ cups finely chopped walnuts, raw or toasted

Dressing 

2-3 tbs vegetable oil, I used avocado oil

½ tbs red pepper or tomato paste

1-2 garlic cloves , minced

1 ½ tbs white balsamic vinegar

½ tsp ground coriander

Salt, black and red pepper to taste

Directions

Combine all the dressing ingredients in a bowl and mix to incorporate

Pour over cooked, cut beans

Add walnuts, herbs and toss all together to combine

Set in the fridge for an hour to set
