Homemade Lahmajun Meat Pie Recipe
Lahmajun: an Armenian dish made of bread and spiced minced meat ,with tomato sauce and parsley . Very flavorful and delicious , yet so easy to make.This dish is often called as Middle Eastern or Armenian pizza .I still think the word pizza is not what really describes this specific dish.Traditional Lahmajun Meat Pie Recipe is made with ground lamb,I’ve tried making it with other ground meats such as: beef,turkey, chicken. By far half & half beef with lamb worked the best.When choosing meat for Lahmajun ,make sure to use something with at least 25-30% fat, that way you’ll have really juicy and tasty Lahmajun meat pie .And feel free to use your preferred spices to season the meat.As for the bread part of it,it’s really simple : water,salt ,flour .Of course you can also make it with regular bread dough.Just as pizza, Lahmajun Recipe can be made different sizes: mini, medium or large, just make it at your presence .You can bake it in the oven or in a non stick pan with tide cover.

Ingredients
For the filling:
About 1 Lbs /500 Grams fresh ground lamb (I also make these with ground beef or turkey,or mix both, use whatever you prefer and make sure it’s good quality fresh meat )
About 15 oz /400 grams tomato sauce
1 Tsp tomato paste
1 Tbs red pepper sauce ( I use the hot kind )
1 Large onion coarsely chopped
3-4 garlic cloves
½ Cup fresh chopped parsley
1 Green chili pepper sliced (cleaned from the seeds)
1 Tsp ground black pepper
1 Tsp paprika
½ Tsp cayenne pepper
1 ½ Tsp salt (add more later if needed)
For the dough
1 ½ Cups of warm water
1 Tsp salt
1 Tsp baking powder (optional)
3-4 Cups all purpose flour ,add more needed (the dough has to be soft but not sticky)
Tip:
Lahmajun can be made with the bread dough:to the same recipe add 1 tsp instant yeast, remove baking powder and let the dough rest until doubled in size (in a warm place)
Directions
Start by making the dough
In a mixing bowl combine:3 cups flour,salt and baking powder ,give it a quick mix (I use hands to make this dough,you can also use your mixer with the hook attachment )
Start adding the water and continue mixing until the dough is formed
Add the additional 1 cup flour if needed
Transfer onto floured surface and knead 3-4 minutes
Place the dough into lightly greased bowl
Cover with towel and let it rest while you make the filling
To make the filling
In a food processor combine all the ingredients listed above, except the meat
Puls for a few minutes until smooth without any chunks
Pour the mixture over the meat and mix well
The filling should have smooth paste texture ,like a soft spread
At this point you can preheat oven to 470° F ,if you want the bake them
Or you can bake these on top of the oven,in a non stick pan, covered (my favorite kind)
Making Lahmajun / thin crust pizza
Generously flour your working surface
Divide the dough into small balls ,approx. walnut size (I also make these larger or smaller as you prefer )
Roll out the dough very thin ,use as much flour as you need to help you rolling easier
Shake off any additional flour
Spoon the filling on the dough ,about 1 tablespoon or more
Spread evenly with a spoon,leaving at least ½ inches of the dough plain,just to form the crust,like if you spread tomato sauce on the pizza
If baking in the oven use a lined baking sheet and bake about 7-10 minutes or until the crust is golden color,ready lahmajun should look like a very thin crust pizza
If baking on top of the oven ,cook 3-5 minutes only, until the bottom part is cooked and bubbles start forming on the crust ,make sure you cover it tight while cooking
Ready lahmajun can be folded in half and set on top of each other
You can enjoy it with fresh squeezed lemon juice, some fresh greens or as is

Тесто
1.5 ст теплой воды
1 ст масло (овощное)
2 ч л соли
1 с т ложки сахара
1 ч л разрыхлитель
3.5-4 ст муки , должно получиться не липкое тесто
Начинка
450-500 г фарш (я смешала баранину с индейкой , можете брать или смешать с говядиной)
1 крупный репчатый лук
3-4 зубчика чеснока
1 ст л томатной пасты, можно ещё свежий помидор и перец добавить
2 ст л перечной пасты ( на канале посмотрите как готовить такой перец)
Если есть салса или лечо (томатные соусы) можно добавить 150г
Свежая зелень: кинза, петрушка (150 г)
Специи: красный, чёрный молотый перец, кориандр, зира, паприка и соль

I don’t do anything , it really depends on what kind of meat you use ,if it’s full fat , the fats will melt away and you may think it gathered ,with less fat meat that won’t happen , also, some add a tablespoon or more flour to their meat filling ,to make it more thicker ,I’d assume that also prevents from gathering
