Peach Cookies Recipe

Another one of my “vintage recipes”, this time for Italian peach cookies. Very popular back in 80’s, theses cookies got well known for their unique look: peach cookies looking so much like the real fruit but tasting nothing like a peach:) I’ve tried a few different recipes for these peach cookies ,this one turned out really good, so let’s stick to this one for now, until I make up my mind and come up with another recipe or variation ,as usual:)

This one is a simple and very good tasting cookie and the entire process of making is quite entertaining as if you’re doing some kind of arts and crafts project.

3 large eggs, at room temperature

1 cup of granulated white sugar

1/2 cup (110 grams) unsalted soft butter

1 tsp vanilla extract

1 tbs orange zest

1 tbs lemon zest

3 1/3 cup all purpose flour

A pinch of salt

For the filing

2/3 cup cold whipping cream

2-3 tbs sugar

1/2 tsp vanilla extract

3-4 tbs Nutella or melted chocolate

The cookies can also be filled with :

*Vanilla or chocolate pudding

*Peach jam

*Dolce de leche ( caramel condensed milk mixed with cookie crumbs )

*Favorite buttercream

To assemble & decorate the cookies you will need

About 1 cup of coarse or fine granulated sugar ( I mix both kinds )

1 1/2 cups of peach or any juice, divided, half for orange color, the other half for pink (you can use food coloring)

Or use fresh beetroot juice for the pink and carrot juice for orange color

Fresh green leaves to decorate,I use the ones from my citrus trees ( optional )

Preheat the oven to 350°F/180°C and prepare a lined cookie sheet

Making the cookies

In a mixing bowl on high speed beat the eggs and sugar until fluffy and pale color

Lower the speed and add the rest of the ingredients : butter, zest, vanilla, flour and salt

Mix until combined and a soft dough formed

Using an ice cream scoop or a tablespoon spoon the dough and make balls ( for bigger cookies use 2 tbs)

Place the cookies on a lined baking sheet , 2″ apart

Bake 20 minutes

Let the cookies to cool down slightly and with a paring knife make holes inside ,from bottom side

Save the crumbs if planning to make caramel filling

Making the filling

Beat the cold whip team ,sugar and Nutella until thick and right consistency

Place in a fridge for a few minutes

Fill the cookies with cold cream and stick together,wipe excess cream

Using a pastry brush,color the cookies with orange and pink juices

Dip and roll the cookie in sugar to cover it completely

Place a fresh green leaf in between the cookies to give it a signature peach look ( optional)
