Potato Patties Recipe
Fried potato patties recipe. One of the few things that my entire family loves to eat , even more, if I make these fried potato patties every day, my teenager son will be the happiest guy on earth. He swallows these as it’s the end of the world and no food is left on earth. I can’t even remember for how long I’ve been making these delicious treats, but it’s been quite a while , and even though I never used a precise recipe, they would turn out simply perfect. I remember , as a child, perashki was my favorite food, my grandma would make the best , most delicious pershki ever. I remember that she would make it with just : plain yogurt, baking soda and flour. I loved helping her to mix and knead that dough. During years, when trying to make it on my own, I’ve tried to add a few more simple ingredients to the dough and the result was just incredible. And as always, not much to add ,time’s very valuable,instead of reading about the food, better make and enjoy it!
Here goes my perashki : fried potato patties recipe,
Ingredients
For the dough
1 cup plain yogurt ,at room temperature ( I use full fat)
1/3 cup sour cream , at room temperature
1 egg, at room temperature
1 tsp salt
1 tbs sugar
1 tsp baking soda
3 1/2- 4 cups of all purpose flour
For the filling
5-6 medium size potatoes, peeled- cubed
50 grams butter, 1 tbs vegetable oil
1 small onion finely chopped
Spices to taste,such as : black pepper, cayenne ,curry ,paprika ,garlic powder
Fresh greens to preference ( parsley ,cilantro or dill), 1tbs or more if desired
You will also need about 1-2 cups of oil for frying
Directions
Making the dough
In a large bowl,lightly whisk the egg, add yogurt, soda, salt and sugar,mix to combine
Start adding the flour a cup at a time, mix and knead into soft and non sticky dough,add more flour if needed, but not too much!
Place the dough into a slightly greased or floured bowl, cover with plastic or a kitchen towel
Let the dough rest while you prepare the potato filling
Making the filling
Cook the potato until tender, add salt and spices to your taste and preference
Sautée the chopped onion in butter- oil until golden color, add to cooked potato and mash until smooth
Roll out the dough into about half centimeter thickness
Using a round cookie cutter cut into shapes
Spoon the filling onto the center of the dough
Bring the edges together forming a semicircle shape
Seal the edges firmly with your fingertips
Tap into elongate shape and fry in 375° hot oil

300-350 мл мацун (йогурт) , можно и 100г сметаны добавить
1 яйцо
1 ч л соли
1 ст л сахару
0.5 ч л соли
0.5 ч л разрыхлитель
3+ ст муки (должно получиться не липнущее, не очень крутое тесто)
Начинка
1.5 кг картофель
Можно сделать зажарку с луком и маслом
Специи: карри, красный, чёрный молотый перец, паприка, чесночный порошок
Из сушенных трав беру базилик и укроп, можно свежую кинзу добавить на вкус
Соль
what is the best type of oil to use to fry these?
Any kind of frying oil works just fine.
I normally use canola
Heghineh jan can you please let me know what kind of mixture is in the plate with the perashki? It looks like mix of cayanne, salt…. what else?

As for the mixture, it’s cayenne, salt, black pepper and a pinch of citric acid
Is there a store bought dough that you also use? Im to lazy to make the dough myself
No, I never buy pershki dough from store, it’s very easy to make
