Apricot Turnover Recipe
Quick and easy turnover recipe, not with traditional apple cinnamon filling but with my favorite apricots.
Last year one of my instagram followers asked me to post an apricot turnover recipe, wasn’t able to and you know how short is the season for that fruit, so finally I was able to put down a quick recipe for that delicious pastry.

Ingredients
You will need 8-10 pieces of 5”x5” puff pastry dough squares
1 egg, slightly beaten
For the filling
4-5 medium apricots
1 tbs unsalted butter
⅓ cup granulated white sugar
1 ½ tsp cornstarch
You will also need a few tablespoons of coarse sugar, for sprinkling the tops
Directions
Start by making the filling
In a skillet combine sliced apricots, sugar, butter and cornstarch
Cook on medium heat a few minutes, don’t stir too much not to smash the fruit
As the mixture thickens, remove from the heat and allow to cool down
Preheat the oven to 375°F/ 190°C degrees
Line the baking pan with parchment paper ( I used foil), lightly spray with baking oil
You can choose to make small or large turnovers, refer to YouTube tutorial for more details
Place some of the apricot filling onto the puff pastry dough
Brush the tips with beaten egg and using a fork press the sides to seal
Egg wash and sprinkle with coarse sugar
Make 1-2 slashes on each turnover
Bake 30-35 minutes, or until golden color
