Armenian Kofta
From Armenian cuisine for the upcoming “Holiday Dishes Menu” : Armenian Kofta or kololak as we call it in Armenian.
The original dish is made with top round beef meat or chicken breast. I decided to slightly update and make it a bit more lighter, flavorful and quite smaller in size. Originally this kind of kofta / kololak is made pretty large , sliced into circles and served with melted or clarified butter. As for the side dish, kofta was served with delicious pudding that’s made of cooked spelt wheat and caramelized onions and mushrooms.
I hope many would try this version of Armenian Kofta and enjoy a gourmet dish on special or just any day:)
Ingredients
For the kofta / kololak
1 1/2 lbs (600 grams) ground turkey breast,1 egg
1 + cup of cold water
1/3 cup of vodka
1 tbs all purpose flour
1 small onion ,finely chopped or grated
1/2 tsp garlic powder
1 tsp ground black pepper
1 tsp paprika
1/2 tsp red chili flakes ( cayenne can be added for spiciness, optional)
Salt to taste
You will also need a large pot with boiling water, salted to taste and a few bay leaves added
A large ice cream scoop or deep ladle for spooning the meat
A bowl with ice water for dipping the spoon before spooning
For the side dish (spelt wheat pudding)
1 cup of spelt wheat, washed strained
2 cups of boiling water
Salt to taste
1 medium onion, sliced
350 grams ( 1 pack ) crimini or any kind of mushrooms,sliced
70 grams butter
1 tbs olive oil
Salt & ground black pepper to taste
Directions
To make the kofta
In a food processor combine: ground turkey, egg ,spices and a half cup of water, you will need to add extra water according to the meat consistency, it has to turn shiny, silky and very smooth
Turn on the processor and allow it to mix at least 5-7 minutes
Stop, scrape and check the consistency of the mixture and add more water if needed
As the mixture reaches the right consistency, add the vodka, flour and mix 2-3 minutes
To the ready mixture add shredded or finely chopped onions and mix to incorporate
Place in the fridge for 25-30 minutes to set
Prep the water : bring it to a boil add salt and a few bay leaves for flavor
Get the ice water ready as well
Use a large ice cream scoop or deep ladle to spoon the meat into boiling water, remember to dip the scoop or ladle into ice water before scooping the mixture ,that way it’ll come off the spoon easier
Cook 20-25 minutes ( if made with large ladle , cook longer 40-45 minutes)
To make the pudding
Wash and drain the grains
Pour into boiling water, add salt to taste
Cook until the water simmers
In a fry pan melt the butter with oil
Add sliced onions, then mushrooms
Sauté until golden color
Add salt and black pepper to taste
Mix sautéed mixture to cooked spelt wheat and gently mix to incorporate
Serve hot with sliced kofte, drizzled with melted or clarified butter

1 գլուխ սոխ
2 ճ գ հալած յուղ
աղ, սև տաքդեղ ըստ համի

1 яйцо
¼ ст водки
1 крупный репчатый лук
Зубчик чеснока
1.5-2 ст л муки
Соль, чёрный и красный молотый перец по вкусу
