Banana Chocolate Chip Cake Bars
Turning the simple, to delicate and really good looking dessert.These banana chocolate chip cake bars quickly became my family’s favorites.Sometimes my teenager son would be done with them before I manage to finish decorating. I have an entire collection of chocolate chip cake recipes,by far this is the simplest and the most popular even among my guests.Some may even “pre order” before coming over, and I don’t mind ,such a hassle free and fun to make dessert. Ingredients
1 Cup all purpose flour
1 Egg
1 Ripe banana ,mashed
⅓ Cup sour cream ,room temperature
¾ Cup granulated white sugar
¼ Cup soft unsalted butter
1 Tsp Baking powder
½ Tsp baking soda
¼ Tsp salt
½ Tsp vanilla extract
⅓ Cup miniature chocolate chips
For chocolate ganache
½ Cup heavy cream
1 Tbs unsalted butter
⅔ Cup semisweet chocolate chips
1 Tbs rum (optional)
Directions
Preheat oven to 350° F
Grease & flour 9”x11” baking pan set aside (or use parchment paper to line the bottom )
In a small bowl swift to combine:flour,salt,baking soda and powder
In a mixing bowl beat butter,sugar 2-3 minutes on high speed,lower the speed and an egg,mashed banana,vanilla ,sour cream, Stop and scrape after each addition,finally add flour mixture and chocolate chips
Spread on prepared baking pan and bake 25-30 minutes,or until a wooden toothpick comes out clean.
Let it cool down completely before you slice.
Cut the corners to even up the cake. Slice into approx. 2”x4” rectangles (or slice into square shapes as you prefer)
To make the ganache:heat the cream,do not boil,add to chocolates ,let it melt 2-3 minutes by mixing slowly with a spatula,add butter,rum, mix all together and pour over the pre sliced cake bars Let those cool down and decorate to your taste.You can use almond meal, fresh sliced banana or banana chips.
Best if chilled in fridge 30-45 minutes before serving
