Brined Asparagus Recipe
Had to share this brined asparagus recipe, since it is another one those quick and easy appetizers, I started sharing this month. I noticed how the month of March turned out to be “green and healthy food “ month. Decided to continue and finish the first month of spring with vegetarian, vegan and healthy dishes only. Hopefully, you guys will like my idea. And I promise to share a good amount of desserts as soon as I set my oven.
I wouldn’t call this a precise recipe, because there are no exact measurements for ingredients, you can simply go to your taste. Make more or less, salty or not, but keep in mind ; this is such a light and quick to eat appetizer, you do want to make a good batch. I’d normally buy at least 4 stalks of asparagus, eat half within next few hours and save the rest to marinate property.

Ingredients
2-3 stalks of fresh asparagus, washed and clean the hard stems
Boiling water
For brine
As much cold filtered water as you need to cover the asparagus
Distilled white vinegar, to each cup of water add ½ tsp
Salt , to each cup of water add about 1 tsp or go by taste
3-5 cloves of garlic, sliced
Directions
Cook asparagus in boiling water 3-5 minutes
While it’s cooking, make the brine
In a bowl combine filtered water, salt, vinegar and slices garlic
Place cooked asparagus in brine , cover and allow to marinate 3-4 hours at room temperature
Store in the fridge and enjoy whenever you like
