Bulgur Mixed Veggie Stew Recipe
Very healthy and delicious bulgur mixed veggie stew from Armenian cuisine.
This dish can be made with different kinds of veggies .

Ingredients
1 large onion cut
3-4 tbs olive oil
¼ cup tomato sauce
1 large potato
1 bell pepper
1 tbs red pepper paste
1 large zucchini, cubed or sliced into semi circles
1 large eggplant, cubed or sliced
2-3 sticks of celery , chopped
1-2 fresh tomatoes
Freshly chopped herbs: parsley , cilantro basil or dill
2-3 garlic clove, minced
⅔ cup bulgur (cracked wheat ) washed drained
2-3 cups cold or hot water, or enough to cover everything and 2 inches more
Spices: cumin, curry, coriander, black pepper, about ⅛ the tsp each or go to your taste
Salt to taste
Directions
Sauté onions until golden color
Add tomato sauce and red pepper paste , cook 1-2 min and add all sliced veggies , lastly add bulgur and pour the water
Cook covered on medium to low heat 25-30 minutes
Spice and season to taste and cook another 7-10 minutes
Turn off the heat and add fresh herbs, mix and allow to set 15-20 minutes
Serve hot or cold
