Cake Mesrop Mashtots Recipe
Armenian meringue walnut cake with an interesting name : Cake Mesrop Mashtots ( ՄԵՍՐՈՊ ՄԱՇՏՈՑ) .
He was the creator of Armenian alphabet . And I can’t really tell why they named the cake after him,
But that’s how all and most Armenian cake recipes are : they all have a specific name, could be the name of a city, country, famous person, etc.
This meringue walnut cake is uniquely delicious. It’s got two thick layers of walnut packed soft biscuits,
A thick layer of crispy meringue in between, and what gives the cake that unique taste, is the rich coffee flavored buttercream.
The cake is usually decorated with a good amount of flower or star shaped meringues.
I decided to add a simple detail as decor, and made a few chocolate letters from Armenian alphabet, to emphasize the cake’s name.

Ingredients
For biscuit layers
6 egg yolks , at room temperature
½ cup sugar
1 stick unsalted butter (113 grams), soft
1 cup sour cream, at room temperature
1 tsp vanilla extract
1 ½ cups flour
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
1 ½ cups coarsely chopped walnuts
For the meringue layer
4 egg whites at room temperature
1 cup sugar
¼ tsp cream of tartar or a pinch of salt
½ tsp vanilla extract
For coffee cream
2 sticks soft unsalted butter (226 grams)
1 egg
1 cup milk
¾ cup sugar
2 tbs flour
1 tbs cornstarch
2 ½ tbs instant coffee
½ tsp vanilla extract
Directions for Walnut Cake
Start by making the meringue as it takes time to bake
To make the meringue
Be sure to clean the mixing bowl and whisk attachment very well,I use a tablespoon of vinegar and paper towel to wipe
Whisk the egg whites until foamy
Add cream of tartar , or salt and start adding the sugar 1 tbs at a time
Scrape the bowl after last addition of sugar
Add vanilla extract
Pipe a few stars or flower shaped meringues to decorate the cake
Optionally sprinkle with instant coffee granules
The rest of meringue divide in two equal portions
Prepare lined baking pans and spread the meringue about 8” diam circle shapes
Bake at 220°F about 1 ½ hours
Turn off the oven, slightly open the door and allow to cool down inside the oven another hour
To make the biscuit layers
Preheat oven to 350°F/ 180°C degrees
In a bowl combine dry ingredients: flour, baking powder,soda and salt, mix set aside
Beat the butter and sugar until fluffy
Lower the speed, beat in the yolks , 1-2 at a time
Add sour cream
Mix in the dry ingredients in 2-3 additions, scrape after each addition
Divide the dough in 2 portions
Bake in 9” lined baking pan , 30-35 minutes or until the toothpick comes out clean
To make the cream
In a heavy bottom saucepan start simmering the milk, do not boil
In a bowl whisk together egg and sugar, add the flour, starch and coffee continue mixing
Add a few tablespoons of hot milk to egg mixture and mix, add a it more and continue stirring
Finally pour all the milk into the bowl and stir
Transfer the mixture back to saucepan, and cook over medium heat until it thickens
Remember to stir continuously
Allow to cool down to room temperature
Beat the butter until fluffy, add in the coffee custard mixture one tablespoon at a time
Add vanilla extract
Assembling the cake
Place a layer of biscuit on your cake plate and spread with cream to cover it evenly
Layers of meringue will go next, be sure to stick them together with a little bit of cream
Again spread with remaining of cream and add the last layer
Frost the entire cake with cream, including the sides
Decorate to your taste with meringues or refer to YouTube video for more options
Allow the cake to set in the fridge 1-2 hours and enjoy your Cake Mesrop Mashtots
