Cheese Bread Recipe
We’ll all agree that cheese bread combo may not be the most dieting or healthy meal for one to enjoy. At the same time, may be unfortunate, that it’s one of the most delicious and filling meals we strive to enjoy, at least once in awhile. Well, my kids can eat this cheese bread every day, if I make it. Of course I can’t manage to bake breads daily, although, have to admit that I have bread dough sitting in my fridge for the most of the time. I already managed to spoil my family with homemade breads and meals, and I’m even happy they don’t ask for street food or takeouts.
This cheese bread idea came to me from a dish called adjarian khachapuri, I did edit my own recipe for that and made it into simpler cheese bread recipe.

Ingredients
For the bread
1 cup lukewarm water
⅔ cup lukewarm milk, I used 2% fat
1 tsp instant yeast, if using active dry yeast, be sure to activate before adding
2 tsp sugar
1 tsp salt
3+ cups all purpose flour, to make a soft, non sticky dough
For the cheese filling
250-300 grams grated mozzarella
150 grams feta cheese, be sure to use salty kind
⅓ cup plain yogurt or farmers cheese, I even use creamy ricotta if I have it on hand
1 large egg, room temperature
Directions
Making the bread dough
Combine all the ingredients in a large bowl, mix and knead a soft non sticky dough

Cover and the dough to rest and rise, may take 45-60 minutes
Making the cheese mixture
Grate the mozzarella and set aside (I don’t buy ready grated cheese, as I find it being too dry and lower quality )
In a bowl combine the egg,feta cheese,yogurt and mix until incorporated
The mixture should be thin and very soft looking
Assembling the cheese bread
Start by preheating the oven to 490°F degrees
Place the dough onto a floured surface, lightly knead and form a ball
Using your fingertips, tap and shape the dough into a disc, then pull and stretch to make it into a thinner circle
Place it onto a lightly floured 16” round baking pan, better if the pan has small holes, that will insure proper baking
Spread the cheese, egg, yogurt mixture evenly on top of the dough
Next, sprinkle the mozzarella on the entire dough, including the edges
Fold the tips to form a stuffed crust, refer to YouTube tutorial for more details
Bake on the lower rack for 15 minutes
Then another 4-6 minutes on the higher rack
Allow to set 2-4 minutes, slice and enjoy!

Additionally, you can brush the crust with butter , not recommended 🙂
