These delicious Nutella  Oreo cheesecake bites quickly became my family’s favorite . Recipe turned out great from the first test, that’s my most favorite thing to happen when making a new dessert. Didn’t have to add or reduce any ingredient. First batch was gone within minutes . I had to make another right after to make everyone happy 🙂

And the fact that they are also “no bake” , makes them even faster and easier to finish.

Oreo Nutella Cheesecake Bites

Ingredients 

Oreo Nutella Cheesecake Bites

For the crust

1 ¼ cup finely ground Oreo cookies (food processor will work the best)

3 tbs unsalted butter, melted

For the Nutella cream cheese filling

1 pack ( 8 oz /226 grams) Cream cheese, at room temperature

⅔ cup powdered sugar, sifted

1 tsp vanilla extract

½ cup Nutella

For the whip cream topping

⅓ cup heavy whipping cream

2 tsp powdered sugar ( confectioners sugar)

⅓ tsp vanilla extract

Mini Oreo cookies for decor , optional

You will also need a mini cupcake tin,lined

Cooking spray

Oreo Nutella Cheesecake Bites

Directions 

Start by prepping the cupcake tin

Line and lightly spray with cooking oil, set aside

To make the crust

Roughly crush and place the cookies in food processor, pulse until fine crumbs formed

Add melted butter and pulse a few more seconds

Place about 1 ½ tsp of the crust inside the cupcake tins

Using a shot glass firmly press the crust to the bottom, set aside, better in the fridge

To make the filling




In a mixing bowl combine : cream cheese, sugar and vanilla

Beat on a low, then high speed for 4-6 minutes or until it’s light and fluffy

Lower the speed and slowly add heavy whipping cream

Continue on low speed and add in the Nutella in 2-3 additions

Mix a few more minutes until everything’s well incorporated

Don’t over beat !

To make the whip cream topping

Be sure to place your mixing bowl in the fridge about 15-20 minutes prior using

Place the cold heavy cream, powdered sugar and vanilla extract in the mixing bowl

Mix on medium speed 3-5 minutes

Increase the speed and mix until the right consistency, watch to avoid over mixing

Assembling the cheesecake bites

Use a piping bag or a spoon to fill the tins with Nutella cream cheese filling

Place in the freezer for 10-15 minutes to set, that will help to remove them from tins faster

Pipe heavy whipping cream on each cheesecake ,I use a star tip for better design

Decorate each cheesecake bite with a mini Oreo cookie or cookie crumbs

Refrigerate 1-2 hours before serving

Keep refrigerated when not serving
