Chickpea Bulgur Salad Recipe

Made up chickpea bulgur salad turned out simply delicious. I couldn’t stop enjoying it !

Inspiration for my salad came from tabule, that I normally make with quinoa , tomatoes, herbs and lemon. Of course this chickpea bulgur salad tastes completely different, very rich, flavorful and satisfying.

Ingredients 

Chickpea Bulgur Salad Recipe - Armenian Cuisine

1 cup #1 grind bulgur, 1 cup boiling hot water

1 can chickpeas

2 tbs red paste, I have a tutorial on my channel

⅓ cup tomato sauce

2 medium lemons, juice from both, zest from one

2 cloves of garlic, minced




8-10 strands of scallions, finely chopped

Half bunch of each: parsley, cilantro and mint , chopped

4-5 tbs olive oil

1 tsp ground cumin

⅓ tsp cayenne or aleppo pepper (crushed red chili)

Salt to taste

Directions

Start by soaking bulgur with hot water, set aside for 10-15 minutes

Meanwhile in a large salad bowl combine: tomato sauce, pepper paste, lemon juice /zest, olive and spices , mix well to incorporate, set aside

Chop the herbs

By this time bulgur should be ready, softened

You can combine all ingredients in the salad bowl, toss and set in the fridge for 30-40 minutes

I served my chickpea bulgur salad on butter lettuce leaves with a slice of avocado, garnished with lemon and pomegranate seeds (optional)

Բաղադրատոմսը 


Բաժակի չափը 250մլ

1 բ եփած սիսեռ. 1 բ մանր բլղուր, եռման ջուր, այնքան, որ բլղուրը ծածկի ու մի փոքր ավել

1 մեծ կիտրոնի քերած կեղևն ու հյութը

3-4 ճ գ լոլիկի թանձրուկ, (եթե չկա ,մածուկը մի փոքր ջրով բացեք,օգտագործեք)

1 ճ գ կարմիր տաքդեղի մածուկ

4-5 ճ գ ձիթապտղի յուղ

Թարմ կանաչեղեն; մաղադանոս, անանուխ,կանաչ սոխ, համեմ

Համեմունքներ; սև ու կարմիր տաքդեղ, քեմոն,աղ

Մատուցել հազարի տերևներով

    Love your chanel and all your fantastic healthy recipes as well as your vibrant personality. I have a question on this one as I’d love to give it a go. What is pepper paste? Can I make it from scratch? I’m not sure if I can buy it here in Australia. Cheers and thank you again for sharing amazing armenian recipes.
