Roasted Chickpeas Eggplant Salad Recipe

Ingredients
1 large or 3-4 small eggplants, roasted peeled
2-3 marinated red peppers, I have a youtube tutorial on how to make it
1 can chickpeas
Freshly chopped cilantro or parsley
Spices for chickpeas: cumin, garlic powder, black pepper, aleppo pepper , salt
1 tbs olive oil
For dressing
1 large lemon zest and juice
1 tbs tahini paste, I have a tutorial for this as well
1-2 garlic cloves, minced
2-3 tbs olive oil
Black pepper
Cumin
Directions
Start by roasting chickpeas
Simply add spices, drizzle with oil and roast at 450° F 25-35 minutes or until golden crispy
Then prepare the dressing, by simply combining and mixing all ingredients together
In another bowl combine roasted eggplants, cut red peppers
To assemble the salad
Pour the tahini dressing over cut eggplants and peppers and mix
Sprinkle with generous amount of chopped herbs
Add roasted chickpeas and serve
Enjoy with warm pita bread or lavash
