Armenian Chocolate Letters
Used these chocolate letters to decorate my recently uploaded Armenian cake Mesrop Mashtots YouTube Video. Nothing difficult, but thought I’d put down a few quick instructions, in case someone decides to use the same chocolate letters for their cake. Since I didn’t temper the chocolate, overall process was very quick and easy, but not tempered chocolate sets better when placed in fridge for a few minutes, as for the regular candy melts, those set even faster and you don’t even have to refrigerate.
Quick instructions, ingredients and tools needed to make chocolate letters & pomegranate decor
¼ cup semisweet or bittersweet chocolate chips
A small piping bag
6-7 white or red candy melts
Red food coloring gel ( if using white melts) food safe paintbrush
2”-3” espresso cup or pomegranate shape cookie cutter
Wax or parchment paper
Cooling rack with horizontal lines or simply draw 1” apart lines using a ruler
To make the the chocolate letters
In a microwave safe bowl, melt the chocolate chips about 1-1½ minutes or until smooth
Place the melted chocolate in a piping bag, cut a small tip and pipe the letters on a wax or parchment paper placed over the lined cooling rack, that will help to have even letters
Place in the fridge for 10-15 minutes
Use when ready
To make the pomegranate
Draw the pomegranate on the back of parchment paper ( refer to YouTube tutorial for more details )
Use a microwave or double boiler to melt the candy melts
Place the melted chocolate in piping bag, cut a small tip
Pipe the outline of the fruit, then fill the rest in the center and using a small spoon spread out evenly
Allow to set a few minutes, it’ll set faster in the fridge 5-7 minutes
Lightly brush with red color and use as needed
