Country Bread Losh
Every time I bake Country Bread Losh, the whole process takes me back to childhood. This was the bread my grandma used to bake for us, we’d eat it with homemade cheese, standing right by tandoori. It was the best food one could ever ask for. For me it still is.
There was this not written rule, in Armenian villages , when someone baked bread, they’d send some to their closest neighbors, or relatives who lived close by.
And who else was to take that bread, of course us, children and even though we were full after eating that much fresh baked Losh and cheese, my grandma knew , she’d better give us some for the road, so that we don’t try biting other people’s bread. She’d bake these little loshes for us, that we’d wear on our wrists and bite on while walking.

Let’s try baking my version of country bread losh, without tandoori and sourdough starter, but still very-very delicious .

Ingredients
For the starter
1 tbs instant or active dry yeast
1 cup lukewarm water
1 tbs sugar
1 tbs whole wheat flour
1 cup all purpose flour
You will also need
3 ½ -4 cups all purpose flour
1 ½ cups lukewarm water
1 tbs salt
1 tbs vegetable oil
Directions
In a glass or plastic container combine and mix all the ingredients for starter
Cover with a lid and set aside for 8-10 hours, it’ll turn into bubbly mixture with sour taste , the purpose of this is to create that sourdough taste, since originally losh was made with sourdough starter
When the starter is ready, we can knead the dough
In a large mixing bowl combine 3 cups of flour and starter
Mix and knead about 10 minutes, add the salt, the rest of flour and oil
Continue kneading until the dough becomes elastic, avoid adding too much flour
Place the dough in a greased large bowl and allow to proof until doubled or tripled in size
This recipe makes 3-4 breads

Preheat the oven to 535°-550° F oven
Bake in a greased baking pan, 15-20 minutes or until bright golden color
It’s a good idea to start baking on the lower rack, a continue baking on upper rack

Hello , thanks a lot for the recipe . In the video you dont mention adding an extra 1 cup and a 1/2 of water to the dough , just wanted to ask if I have to add that much water or leave it out.
