Easy breakfast idea for your consideration. One of my favorite Armenian breakfast appetizers . Lavash and cheese egg rolls : crispy, flaky, cheesy, slightly spiced with peppers and fresh greens added to preference .
Such a simple meal yet so filling, satisfying, it will keep you going for hours . These can be pre made a day ahead and fried when desired, you can even freeze these for weeks,kept in zipped bag or plastic food container.

Ingredients

cheese egg rolls
120 grams feta cheese ( or any salty dry cheese)
200 grams farmer’s cheese (ricotta or not too salty crumble cheese )
3-4 tbs chopped fresh greens (I use scallions and cilantro)
1 tsp halepo red pepper (optional)
1 pack lavash bread , cut into 5″x5″ squares
Butter and vegetable oil for frying

Directions

cheese egg rolls
Mix the cheeses ,greens and pepper with a fork or using your fingers
Wrap in lavash and fry in hot butter oil mix, until golden on both sides
Serve hot ( preferred morning drink with this appetizer is sweet hot tea)
