Eggplant Chickpea Stew Recipe
Simplicity is the beauty of our cuisine, this time it’s called smbukov mantchik , which is a veggie stew made with eggplants and chickpeas , spiced and seasoned to perfection.

Ingredients
1 large (about 1lbs) eggplant , cubed
1 medium onion , finely chopped
2-3 fresh large tomatoes or 1-1 ½ cups canned , cut or shredded
1-2 garlic cloves
1 can (15oz) garbanzo beans
1 tsp dry mint or use any of your favorite dry or fresh herbs
Salt , pepper, curry, cumin to taste
Directions
Sauté onions until translucent
Add tomatoes and eggplants, cook covered 7-10 minutes , stir occasionally
Mix in garbanzo beans, garlic, spices and herbs
Cook a few more minutes and serve
