The Best Fried Chicken and Quince Recipe
Here’s the best fried chicken and quince recipe, from my favorite Armenian cuisine.Or should I say, my own version of an Armenian dish.
This is not even an exact recipe, this dish is about two simple ingredients: meat and fruit, properly spiced and slow cooked, fried together. One completing the taste of the other, making the entire meal deliciously unique and flavorful.
In general, fried chicken recipes are quite similar, what makes this one special , is that fragrant fruit : quince. It’s interesting how one simple fruit can change the taste of meat and make it so irresistible and so good.

Ingredients
One large bone in chicken breast, I had two half breasts, you can always buy ready breast fillet if you like, I prefer the meat with bones and skin on
2 medium quince, washed
1-2 cloves of garlic
Half a lemon, zest and juice
2-3 tbs of olive oil
4 tbs butter
A few strands of fresh thyme, or 1 tsp dry herb
2-3 tbs kefir or heavy cream, or plain yogurt ,½ tsp ground black pepper
¼ tsp cayenne ,¼ tsp red chili flakes, optional
½ tsp coriander , feel free to use your favorite spices and seasonings
⅓ cup coarsely chopped walnuts
Pomegranate seeds for garnishing, optional
Directions
Wash, tap dry and remove the skin, extra fats off the breast, debone and slice into 2” strips
Place the chicken strips in a bowl and start adding your ingredients for your marinate
Add the oil, lemon juice,zest, kefir, minced garlic, salt, peppers and herbs and gently massage everything to cover the chicken strips entirely
Place it in the fridge for 1-2 hours
Meanwhile cut and clean the quince from seeds, slice into 2” pieces, refer to YouTube tutorial for more details
Chop and prepare the walnuts
Remove the meat from fridge and add the sliced fruit, toss to incorporate
Preheat a large non stick skillet and place the meat and fruit side by side
Cook over medium to low heat, by constantly turning both meat and fruit
As those turn light golden color, add the butter in between the slices
If you notice the butter is burning, add a few teaspoons of olive oil
When you notice the meat is cooked and ready but fruits are still hard, remove the meats and place in covered container
Continue cooking the fruits until tender
Toss the walnuts into the skillet and mix a few seconds to toast in that flavored butter
Arrange the finished dish in a platter, drizzle with walnuts and pomegranate seeds
Serve very warm
