Green Bean Appetizer Recipe
Simplest and the most delicious green bean appetizer from Armenian cuisine. To be honest, I haven’t made this cold appetizer for a while, could be for a few years, even started craving it.
Then, I thought, this will be a good addition to the month of “cooking green & healthy”. If you’ve been following my English YouTube channel, you may be aware that the month of march I’m only sharing healthy vegetarian, vegan or pescetarian dishes. Ingredients
1 ½ lbs flat green beans ( other kind will work as well)
Boiling hot water for cooking the beans
Ice cold water for cooling them after beans are cooked
For the dressing
2 tbs olive oil
1 tbs white vinegar
3-4 cloves of garlic, minced
Salt and black pepper to taste
2 tbs finely chopped fresh dill
Pomegranate seeds (optional)
Directions
Clean and cook the beans until tender, refer to YouTube tutorial for more details
Place in ice cold bath to cool down and prepare the dressing
Simply combine all the ingredients, except for the dill, and mix well
Drizzle over the beans and toss
Add chopped dill and toss again
Let the beans to marinate 30-45 minutes
Garnish with pomegranate seeds and serve (optional)
