Green Beans Bulgur Stew Recipe
Quick, easy and healthy dish called: lobov korkotapoor in Armenian , means green beans bulgur stew or meal.

Ingredients
½ lbs fresh green beans, I precooked mine since flat green beans cook longer
1 cup of bulgur wheat ( #4 grind) or use quinoa , brown rice , or any of your favorite grains
2 cups hot water or enough to cover the grains completely
1 medium onion, finely chopped
2-3 tbs olive oil or any vegetable oil
1-2 tbs red pepper paste
1-2 garlic cloves, minced
I also added dried herbs: dill, mint, basil ( optional)
Salt , pepper, cumin
Directions
Sauté onions with oil
Add cooked beans, bulgur, water and bring to a boil
Stir in spices, herbs, garlic and red pepper paste
Cover the lid and cook over medium to low heat
It’s ok to open the lid halfway through cooking, stir and check the readiness
Water should evaporate completely or if you like more soupy consistency, add more water
Serve with freshly squeezed lemon juice and fresh herbs or as desired
