Green Stuffed Bread Lavash

Herb stuffed bread lavash for Easter table. Another must food for Armenian Easter table are sautéed greens. My grandma used to sautee at least three or four different greens on Easter. My most favorite was mandak or as they call it in English : chrysanthemum. Very fragrant, with slight sweetness , that specific green was always on our Easter menu.







And I loved having my sautéed  greens wrapped with Armenian bread lavash, so combining the two favorites in one dish turned out to be a good idea, therefore the dish I want to share is Herb stuffed bread lavash, or however you want to name it:)

Ingredients for stuffed bread

2 bunches of chrysanthemums ( mandak)

½ cup water

1-2 tbs olive oil

Salt to taste

½ tsp ground black pepper

¼ tsp cayenne

1-2 cloves of garlic, minced

3-4 tbs fresh parsley, finely chopped

3-4 tbs fresh cilantro, finely chopped

1-2 tbs scallions ,( green onions) chopped

You will also need 4 layers of lavash bread, cut about 4”x12” long strips

⅓ cup melted clarified butter (ghee) optional ,you can substitute it with olive oil

Directions

Start by cooking the chrysanthemums

Wash the greens, chop coarsely, place in a pot

Add water and cook 5-7 minutes or until stems are tender

Drain the water very well

To the same pot add 1-2 tbs olive oil, drained greens, salt, peppers, garlic

Mix and cook for another 1-2 minutes

Remove from the heat , place in the bowl and mix in the fresh chopped greens

Mix everything well to incorporate

At this point you can preheat the oven to 375°F/190°C degrees and prepare a lined baking pan

Lightly brush each strip of lavash with clarified butter (or olive oil)

Place about a tablespoon of the green mixture on the lavash,wrap a triangle shape

Place on a baking sheet and brush the top with butter

Bake 15-20 minutes or until golden color ( you can also fry these with olive oil or butter)

Serve your stuffed bread triangles hot, with plain yogurt and red aleppo pepper ( optional)
