Homemade Sponge Cake Recipe
Ingredients
1 Cup of flour ( I use cake flour for this specific cake,but all purpose will work as well)
6 Eggs (at room temperature)
1 Cup granulated white sugar
1Tsp vanilla extract
¼ Tsp salt
450 gram grape jelly (or any other jelly you like)
⅓ Cup juice or just sweetened water
½ Cup heavy whipping cream +2tbs sugar + 1/2tsp vanilla extract(optional for cake decoration)
Directions
Preheat oven 350 F (177C)
Heavily butter/flour an 8” baking pan or use wax paper to avoid sticking
In a bowl sift flour and salt ,set aside
With your mixer beat eggs ,sugar and vanilla extract on a high speed,until it turns fluffy and pale color
Turn off the mixer and start adding the flour mixture slowly,sift and fold with spatula,a little bit at a time,
Do not mix fast not to deflate the eggs mixture
Bake 35-40 minutes or until the top is golden brown color
Remove from the baking pan
Let it cool on the cookie rack ,transfer to your cake plate and generously drizzle the cake it with juice to moisten ,then spread the jelly
Beat the whipping cream with 2tbs sugar,1/2tsp vanilla and decorate at your preference and taste
