Chocolate Ice Cream Sandwiches Recipe
Summertime treat from my childhood: wafer ice cream sandwiches.
Have to admit, I don’t make these ice cream sandwiches very often. Growing older made me kind of grow apart from the treat called ice cream, I don’t eat it often, but often, I caught myself craving a specific kind of childhood sweets. Here is one of them. Hope you try my recipe and enjoy it !
Ingredients
For wafers
You will need a flat iron wafer maker ( the same you’d use to make ice cream cones)
2 eggs, at room temperature
¼ cup granulated white sugar
¼ cup heavy whipping cream
½ tsp vanilla extract
½ tsp baking powder
⅔ cup all purpose flour, add more if you need to adjust the cconsistency to make thicker wafers
Pinch of salt
You will also need 2” or 3” round cookie cutter
For ice cream
2 ½ cups full fat heavy whipping cream, cold
1 can sweetened condensed milk
1 tsp vanilla extract
⅔ cup semi sweet chocolate chips
¼ cup milk
2 tbs unsalted butter
You will also need a 9”x13” baking pan, lined with cling wrap, refer to YouTube video for more details
Directions
To make the wafers
In a mixing bowl combine eggs and sugar, beat on high speed until fluffy
Mix in vanilla extract, heavy whipping cream and beat on low speed 1-2 minutes
Stir in baking powder, salt and flour, mix another 2-3 minutes or until incorporated
Batter is ready
Preheat the wafer maker, lightly grease and pour a teaspoonful of batter onto the center
Cover and cook 2-3 minutes or until light golden color
Using the cookie cutter cut the wafer and remove the extra sides, be sure to do that while it’s still hot, refer to YouTube tutorial for more details
To make the ice cream
Start by making the chocolate ganache
In a microwave safe bowl,combine chocolate chips, milk and butter , melt until smooth, set aside to cool down
Combine the cooled ganache with sweetened condensed milk and mix until incorporated
In a cold mixing bowl combine cold heavy whipping cream and vanilla extract, beat until thick and the right consistency is reached, do not over mix it !
Add the condensed milk – ganache mixture and fold with a spatula until incorporated
Place the chocolate cream mixture in prepared baking pan and smooth out with an offset spatula, making sure it’s flat and even
Cover with cling wrap and set in the freezer for 6-8 hours or until frozen
To assemble the ice cream sandwiches
Keep in mind you need to work a bit fast
Take out the plastic wrap and remove the ice cream slab from its pan
Dip the cookie cutter in cold water and cut out the ice cream
Place on the wafer layer and cover with the second layer to form a sandwich
You can dip the sides in toasted, crushed nuts, sprinkles or mini chocolate chips
Set the ready ice cream sandwiches in freezer until ready to serve
