Homemade Kebab Recipe
My homemade kebab recipe can be no different than any other kebab recipe. All that matters is to get the best quality, freshly ground meat, to spice / season it properly and marinate well. Have to admit that I do have a quite an experience with this dish, as it happens to be one of my boys’ favorites and I make it quite often. After trying homemade version of kebab, you may never go back to ordering it from restaurants or meat markets. We find that ordered meats , barbecue , kebab … don’t always taste as fresh or tasty as we expect. It has been many years now since we stopped ordering , instead I’d marinate the meats, making sure it’s fresh and good quality , I’d use all the flavorful and rich spices to make it taste great. The same kebab recipe can be done on bbq grill or in the oven, just as I show in my YouTube tutorial video. This is a very convenient way to make a delicious “outdoor style” dinner, without going outdoors and starting that time taking grill.
I’ll share my beef and turkey homemade kebab recipe and will make another recipe for chicken kebab during summer , that one is slightly different but equally delicious .

Ingredients
2 ½ lbs ground meat, I use half turkey, half beef
2 medium onions, finely grated (optionally you can add 2-3 tbs fresh parsley finely chopped)
Salt to taste
1 tsp ground black pepper
½ tsp cayenne
½ tsp cumin
1 tsp garlic powder (or 1 clove fresh minced )
⅓ tsp turmeric
1 tsp ground white pepper
1-2 tsp sumac , have extra to sprinkle on ready kebabs
1 tsp Aleppo pepper ( optional )
You will also need thick wooden skewers, lined baking pan with cooling rack (if cooking in the oven) ,cooking spray
A bowl with cold water to help with shaping the kebabs
Directions for Kebab Recipe
In a large bowl combine all the ingredients : meats & spices
Using hands mix very well, until incorporated
Place the kebab meat in the fridge to marinate 3-6 hours , can be even longer
Soak the skewers in cold water before using, about 10-15 minutes
Preheat the oven to 500°F /220°C degrees
Line baking pans with foil , for easy cleaning
Place the cooling rack in baking pan and lightly drizzle with cooking spray
Remove skewers from water and pat dry with a paper towel
Take a handful of meat, form a ball and place over the skewer

Place ready shaped kebabs on greased racks
Bake 15-20 minutes or until cooked
Turn once halfway through the baking ( also switch the pans if using 2 pans)
Serve hot
You can sprinkle with sumac, garnish with fresh sliced onion rings and chopped parsley
This portion is good to serve 2-3 people
