Mallow Soup Recipe
Quick and easy Mallow soup that doesn’t require many ingredients, nor a precise recipe. While this extremely healthy green is in season, try to make this delicious soup, or even a simple fresh salad. I have a tutorial on my YouTube channel on the salad as well.
In many regions of Armenia, this soup is made with different ariations. I’ll post a quick recipe for my grandmother’s Mallow soup . I can guarantee you’ll love it. If you decide to add a few extra herbs or spices, feel free to do so.
For me this Mallow soup is a light and satisfying comfort meal, or as I call it : guilt free comfort food. The soup consists of a few ingredients: Mallow, onions, potatoes and water or broth. Of course salt and pepper are a must. And forgot to mention another ingredient: one beaten egg, which is usually added after the soup is cooked and still hot. I didn’t add it to mine, but I can assure it adds a lot of thickness and really good taste to the soup. And lastly , we serve this Mallow soup with garlic yogurt. As simple as that.

Ingredients
1 bunch (about 16oz/450g) fresh mallow, finely chopped
2-3 tbs olive oil or butter
1 medium onion, chopped
1 large potato, cubed
4-5 cups boiling water or broth
Salt & pepper to taste
1 beaten egg
Yogurt and minced garlic for serving
Directions
Sauté onions until slightly translucent
Add in potatoes and Mallow, stir and cook for 1-2 minutes
Add the water and bring to a boil
Cook until the potatoes are tender
Season with salt and pepper
Turn off the heat and add beaten egg
Cover the lid and allow to set 5-10 minutes
Serve hot or cold with garlic yogurt
