How to Marinate Spicy Peppers in Vinegar Brine

Ingredients 

1 lbs spicy peppers ( jalapeños will work well)

1 medium carrot sliced 

6-8 cloves of garlic 

A few stems of thyme or oregano 

For the brine 

1 cup of water 

½ cup apple cider vinegar 

½ cup vegetable oil 

1 tbs salt 

1 tsp black pepper seeds 

1 tsp allspice 

2-3 bay leaves
