Meatball Soup Recipe
Simple comfort food at its finest: meatball soup or Kololakov apoor in Armenian.

Ingredients
For meatballs
1 egg
1 small onion , grated or finely chopped
250 g ground meat, I prefer turkey
2 tbs rice , immerse in boiling hot water but don’t cook fully
Salt pepper to taste
For soup
6-7 cups boiling water
1-2 bay leaves
1 small onion, sliced into small cubes
2-3 tbs olive oil or butter
1 medium carrot shredded or sliced
¼ cup salsa , lecho or any tomato sauce
1 tbs red pepper paste , optional
1 fresh green chili
2 medium potatoes, cubed
¼ cup rice , I didn’t add
Salt, red and black pepper, curry , cumin to taste, or choose any of your favorite spices
Fresh or dried herbs: basil, dill and cilantro or anything on hand
1 beaten egg
Directions
Start bay making meatballs
Combine all ingredients , mix and form meatball
Drop into boiling water, add bay leaves and start cooking
Add in cubes potatoes and allow to cook 7-10 minutes
Meanwhile, sauté onions with olive oil 2-3 minutes
Add shredded carrots and continue stirring, cooking until carrots are slightly tender
Mix in salsa, tomato paste and spices , dried herbs
Cook this mixture 2-4 minutes and add over boiling meatballs
Add fresh pepper, rice , salt and allow to cook a few more minutes or until potatoes and meatballs are fully cooked
Remove from the heat, mix in herbs, beaten egg , cover the lid and allow to set 7-10 minutes
Enjoy with pickled veggies and bread
