Meringue Kisses
These bite size meringue kisses are one of my favorite cake decors and sweets to go with coffee. The colored version of meringue kisses makes them even more decorative and special, so giving them away in gift bags can be a good idea.
Planning to make a tutorial on a lemon meringue cake, that I always decorate with meringue kisses , therefore this recipe and tips may be very useful. Be sure to take notes and also watch the YouTube tutorial.
Ingredients
For the meringues
2 egg whites, at room temperature
½ cup granulated white sugar
¼ tsp cream of tartar ( or 1 tsp lemon juice, pinch of salt)
1 tsp vanilla extract
Food coloring paste, brush (optional)
You will also need large piping bag with 1” diameter tip
Directions for Meringue Kisses
Preheat the oven to 250°F /120°C
Be sure to clean the mixing bowl and whisk attachment very well, I use regular vinegar to wipe the bowl and whisk attachment
Whisk the egg whites until white and foamy consistency reached
Add cream of tartar mix a minute and start adding the sugar 1 tbs at a time
Scrape the bowl after last addition of sugar
Add vanilla extract and a pinch of salt
Whisk a few more minutes or until there are no more sugar granules in the meringue ( use your fingertips to check)
The final look of the meringue should be glossy and very thick
If making colored meringue kisses
Turn your pastry bag inside out and using a brush make a few color stripes along the bag
Place the meringue mixture inside and carefully turn it
Pipe the kisses 2” apart , on a lined baking sheet
Bake at 250°F about 60-70 minutes
Turn off the oven, slightly open the door and allow the meringue kisses to cool down , 35-45 minutes before you remove them

Թխել 60-70 րոպե, 120°C նախապես տաքացրած ջեռոցում
Թխելուց հետո ջեռոցի դուռը կիսաբաց անել, թողնել սառչի , հետո հանել
